Step one: collect your ingredients. Bread, butter, and all the cheese you kind find in your house. You need to have at least Parmesan, cream cheese and some kind to put in the middle (Swiss, cheddar...). I have cream cheese, shredded Parmesan, white cheddar, regular cheddar, shredded mozzarella and feta cheese. Literally use all the cheese in your house.
Step two: apply cream cheese on one side of each piece of bread. It's great if you have some kind of herb and spice cream cheese, but if not -- improvise! Raid your spice cabinet and use everything that sounds/smells good. I use powdered onion, garlic, basil, dill weed and oregano. Just got nuts.
Step three: put in your middle cheese. Here, I made a checkerboard and white and orange cheddar and put the mozzarella and feta on the other side. Then use a bit of cream cheese to paste the two sides together...
Step four: liberally apply butter and press into the butter a generous amount of Parmesan cheese. Flip it over and do the other side.
Step five: cook on medium heat. Cover pan to in increase cheese meltiness.
Step six: flip and cook the other side when it looks something like this.
Step seven: when cooked to perfection, cut in half DIAGONALLY and serve with something less greasy, like a salad.
Step eight: enjoy, and be sure to take a grilled cheese selfie.
